Recipe Ingredients for Reinhart's bagels

1 teaspoon instant yeast
4 cups unbleached bread flour
2 1/2 cups water, room temperature
1/2 teaspoon instant yeast
3 3/4 cups bread flour
2 3/4 teaspoons salt
1 tablespoon honey

Recipe Directions for Reinhart's bagels

  1. Prep starter and cover with plastic wrap- let sit on counter for about 2 hours (until foamy and bubbly).

  2. Add rest of ingredients, except 3/4 cup flour (calls for barley malt syrup, not honey, but honey is recommended substitute). Mix together, then knead in remaining flour (about 10 minutes). Immediately shape into balls, let rest on counter covered with damp towel about 20 minutes. Then shape into bagel by poking hole through middle and shaping with hand. Make hole larger than you'd like it to end up.

  3. Place on oiled parchment lined pan and covered with oiled plastic wrap overnight or up to 2 days.

  4. heat oven to 500

  5. bring water to a boil and boil bagels in batches, 1 minute on each side

  6. return to oiled and corn meal dusted parchment

  7. bake 5 minutes, turn pan and bake 5 minutes more
