Easy, healthy & delicious. Good hot or cold.

Recipe Ingredients for Reina's Chickpeas

1 can Chick Peas
1 large Onions
2 cup Diced Tomatoes
4 clove Garlic
1 cup Parsley
1 tbsp Olive Oil, Extra Virgin

Recipe Directions for Reina's Chickpeas

  1. Soften roughly chopped large onion and crushed garlic (I use 4 cloves--use more or less to y our taste) in the olive oil. This will take 5-10 minutes.

  2. Add drained can of chickpeas (Progresso preferred) sprinkle with kosher salt, stir. Add one can (16 oz? a can the same size as the chickpeas, basically) of diced tomatoes, stir. Cover and let simmer gently for about 10 minutes.

  3. Stir in generous handful of chopped parsley.

  4. If you want more heat, either used diced tomatoes with chilies or add some hot sauce of your choice.

  5. Great hot or cold.
