Recipe Ingredients for Regina's squash stir fry

2 med carrots, cleaned and sliced
1 med zucchini, sliced
1 med yellow squash, sliced
1 clove garlic
2 tsp olive oil

Recipe Directions for Regina's squash stir fry

  1. Put olive oil in frying pan and swirl around. Add carrots and fry until slightly tender.

  2. Crush garlic clove and add to carrots; stir.

  3. Add zucchini and squash and fry until vegetables are crisp-tender.

  4. Add salt and pepper to taste
