Recipe Ingredients for Refrigerator Bran Muffins

3/4 cup water
2 oz. prune juice
1 cup all bran buds
1/2 cup Smart Balance 37% light spread
1 cup sugar
2 eggs
1/2 quart buttermilk
2 cups whole wheat flour
1/2 cup ground flaxseed
2 1/2 tsp. baking soda
1/2 tsp. salt
2 cups Kellogg's All Bran
1 1/2 cups raisins

Recipe Directions for Refrigerator Bran Muffins

  1. Pour 1 cup boiling water over 1 cup 100% Bran. Let cool.

  2. Meanwhile, cream Smart Balance Light with sugar until fluffy.

  3. Add beaten eggs, beat again until fluffy.

  4. Add buttermilk and bran mixture.

  5. Sift together flour, soda and salt, add to above.

  6. Stir in All-Bran.

  7. Stir in raisins.

  8. Mix in large bowl.

  9. Store in covered jar in refrigerator up to 8 weeks.

  10. Bake 25 minutes at 375 degrees.
