Moist muffins that keep in fridge until ready to bake

Recipe Ingredients for Refrigerator Bran Muffins

1 1/2 c boiling water
2 1/2 T baking soda
2 c All Bran cereal
1/2 c butter
2 c white sugar
1/2 c powdered milk
3 eggs
1 c applesauce
1 c plain yogurt
1 banana, mashed
1 c grated carrots
2 c raisins
1 c chopped walnuts
1 T vanilla flavoring
1 quart buttermilk
1 c flour
3 c wheat flour
1 c wheat germ
1 T salt
3 T cinnamon
1 T nutmeg
4 c bran flakes

Recipe Directions for Refrigerator Bran Muffins

  1. Mix Boiling water, baking soda, and All Bran in bowl. Let it cool

  2. In a large bowl, mix butter, sugar, milk, eggs, applesauce, and banana.

  3. Add the bran mixture from the first bowl.

  4. Add raisins, vanilla, and buttermilk

  5. Add flours, wheat germ, salt, cinnamon, nutmeg, bran flakes

  6. Blend well, cover with lid and keep in fridge. Do not use for 24 hours. Stir well before putting in muffin tins. Fill 2/3 full and bake at 350 for 20-25 minutes.
