Mexican Refried Beans & Egg. Serve with sour cream, pico de gallo, and tortillas. Spanish Rice optional.

Recipe Ingredients for Refried EggBeans

1 large Egg, Whole
0.75 cup Refried Beans, Traditional
3 serving Taco Sauce Medium
1 tbsp Olive Oil
3 slice, large (1/4" thick) Onions
1 tbsp chopped Shallots
5 serving Pico de Gallo
0.4 cup, cubes Avocados
3 large Mushrooms
3 slice, thick/large (1/2" thick) Tomatoes, Red, Ripe
1 lemon yields Lemon Juice

Recipe Directions for Refried EggBeans

  1. Heat pan on high for 1 minute.

  2. Add olive oil. Cook for 1 minute.

  3. Add onions and shallots (chopped).

  4. Stir until starting to brown (2-4 minutes).

  5. Add taco sauce and lime juice, stir.

  6. Reduce heat to medium.

  7. Add egg, stir well for 1 minute.

  8. Add refried beans, stir well for 3 minutes.

  9. Add pico de gallo, avocado, tomatoes (cubed) and mushrooms (sliced), stir well.

  10. Heat uncovered, stirring occasionally for 5-10 minutes.
