My boyfriend and I threw this together for dinner over rice last night with avocado & sour cream on top - delish!

Recipe Ingredients for "Refried" Beans

20 oz pinto beans, rinsed, drained
1 onion, chopped
4 tomatoes, chopped
1 poblano pepper, sliced
1 jalapeno pepper, diced
1/4 cup chicken broth
4 oz corn, frozen
1/2 tbs canola oil

Recipe Directions for "Refried" Beans

  1. Heat oil in a large skillet. Add onion (and garlic if you'd like) and saute until translucent. Add tomatoes, any spices you like (we added cumin, salt, and pepper), corn, peppers and chicken broth and let simmer for 5 - 8 minutes.

  2. Remove from heat and mash the beans with a fork. Serve in burritos, over rice, or dip chips in it - very versatile!
