Recipe Ingredients for Refried Bean Soup

2 teaspoons olive oil
1 medium onion
1 cloves garlic , minced
2 cups of water
1 tbsp chicken bouillon
14 1/2 oz diced tomatoes, mexican style stewed
14 1/2 oz refried beans
1/4 tsp black pepper
1/2 tsp salt

Recipe Directions for Refried Bean Soup

  1. Cook onion and garlic in oil in a Dutch oven over medium-high heat, stirring constantly, until tender. Add beans, both tomatoes and chicken broth, stirring until smooth. Be sure to mash the lumps of refried beans until completely dissolved. Bring to a boil, reduce heat, and simmer 15 minutes.

  2. Ladle soup into individual soup bowls; top with crushed tortilla chips, cheese, and sour cream. Serve immediately.
