Recipe Ingredients for Refried bean enchiladas

1.75 cup Old El Paso Refried Beans Traditional
1.75 cup Beans, Black, Mature Seeds
1 pepper Habanero Chile
12 medium Carrots, Baby
1 clove Garlic
3 serving Olive Oil
0.06 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
4 tbsp Chili Powder
1.75 cup Tomato Sauce
0.33 tablespoon Oregano
1 tsp Cumin
6 tortilla 6" Low Carb Whole Wheat Tortillas 10ct
1 oz Colby Jack Cheese
1 cup Rice, Brown, Medium-grain, Cooked

Recipe Directions for Refried bean enchiladas

  1. Cook the carrots and habanero in a medium hot sauce pan until softened.

  2. Add the garlic and cook 1 minute more.

  3. Add the refried beans and drained black beans and stir to combine. Remove from heat.

  4. In a separate saucepan, heat oil then add flour, smoothing and stirring with a wooden spoon.

  5. Cook for 1 minute then add chili powder and cook for 30 seconds.

  6. Add tomato puree, oregano, and cumin, and stir to combine.

  7. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth as it simmers.

  8. Preheat oven to 425 degrees.

  9. Spread a small amount of sauce in a baking dish to prevent sticking.

  10. Take one tortilla and spread a large spoonful of the refried bean mixture in center of tortilla.

  11. Add a large spoonful of cooked brown rice.

  12. Roll tortilla and place in baking dish.

  13. Repeat until all the refried beans are used.

  14. Pour enchilada sauce over top and sprinkle with cheddar cheese.

  15. Bake in oven at 425 degrees until beans are heated through and cheese is melted and bubbling, about 20 minutes.
