Refried Bean Dip Recipe

Recipe Ingredients for Refried bean dip

3 cups dry kidney beans
6 cups water
250 g smoked cheddar cheese
2 tbsp butter
1 tsp cumin
1 tsp paprika
2 tsp salt
2 tsp garlic powder

Recipe Directions for Refried bean dip

  1. add beans and 6 cups of water to a pressure cooker. Put the lid on and bring to a boil. Let steam vent for 10 minutes, then set the pressure to high. Let cook 15 minutes once it comes up to pressure, then turn the heat off and let it cool until you're able to take the lid off.

  2. Drain and retain the liquid. Melt 1 tbps of butter in a large cast iron pan over medium heat, and then add the beans, one spoonful at a time, allowing them to fry in the butter for a minute or so before you add more.

  3. Add beans to an oven-safe dish, shred and add the cheddar cheese, salt and spices and then mash to the desired consistency with a potato masher. Add the cooking liquid back in as needed to attain the consistency you're looking for.

  4. Place the remaining chunk of butter on top of the beans - don't mix it in, and bake at 350F for an hour or so, uncovered. After baking, mix any 'crusties' on the surface and stuck to the pan back into the dip as best as you're able. You may need to add more liquid back in. Beer might be nice...

  5. Serve.
