Super-refreshing, and super-simple to make! Found in March 2008 Family Circle magazine, original recipe by Anne Gordon.

Recipe Ingredients for Refreshing Chicken Salad

2 pounds of boneless, skinless chicken breast halves
2 cups green grapes, cut in half
3 stalks celery, sliced thin
20 ounce pineapple chunks
1 1/2 cup Miracle Whip Light
1/2 teaspoon seasoning salt
1/2 cup chopped walnuts

Recipe Directions for Refreshing Chicken Salad

  1. Put the (not frozen) chicken in a saucepan and cover with water. Bring the water to a boil. Reduce heat and simmer 15 minutes or until internal temperature registers 160 on an instant-read thermometer. Remove chicken from the water and let it cool on a cutting board.

  2. Cut cooled chicken into bite-sized pieces. Place in a large bowl and sprinkle with seasoning salt. Add all other ingredients and stir gently to combine.

  3. Refrigerate for at least 2 hours.

  4. Stir and serve! If you like, you can sprinkle the 1/2 cup of walnuts over the top of the salad before you serve.
