Recipe Ingredients for Reduced Sugar Carrot Cake

2.75 cup, grated Carrots
1/2 cup Pineapple Chunks in 100% Juice
2.5 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1 cup Vegetable Oil, Canola
1 tsp Baking Soda
1.5 Teaspoon Baking Powder
1 large Egg, Whole
4 oz SPLENDA Sugar Blend for Baking

Recipe Directions for Reduced Sugar Carrot Cake

  1. shred the carrots

  2. In a bow combine the flour, baking soda, baking powder,cinnamon and 1 tsp salt

  3. Whisk together the eggs, sugar and oil.

  4. Add the pine apple and reserve a little juice in case the batter is too thick.

  5. Combine the wet ingredients with the dry and add the carrots.

  6. Batter should be slightly thick and makes 2 9" rounds, bake at 325 for 35-40 minutes
