My revised healthy version of zucchini bread.

Recipe Ingredients for Reduced fat whole wheat zucchini bread

6 egg whites
1/4 c olive oil
3/4 c applesauce
2 tsp vanilla
2 c Grated fresh zucchini
2 c sugar
3 c whole wheat flour
1 tsp Baking soda
1/2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp allspice
1/4 tsp ground cloves
1 c walnuts, chopped

Recipe Directions for Reduced fat whole wheat zucchini bread

  1. Beat eagg whites untill frothy, add oil, applesauce, sugar, zucchini & vanilla, cream together

  2. Sift together all dry ingredients, add to creamed mixture, mix well.

  3. Add chopped nuts.

  4. Divide equally and pour into 2 loaf pans that have been sprayed with nonstick spray.

  5. Bake at 325 for 1 hour or untill toothpick inserted in center comes out clean.

  6. Remove from oven and cool ten minutes in pan on wire rack. Remove from pans & cool completely. This bread may be wrapped in plastic & frozen for later use.
