A basic reduced-fat vinaigrette recipe that doesn't sacrifice that vital olive-oil flavor.

Recipe Ingredients for Reduced-fat vinaigrette

1 cup water
2 tbsp arrowroot or cornstarch
1/4 cup cider vinegar
1 tbsp dijon mustard
3 tbsp extra-virgin olive oil
1 clove garlic, crushed
1/2 tsp salt

Recipe Directions for Reduced-fat vinaigrette

  1. Mix arrowroot or cornstarch with a few tbsp of the water to a milk-like consistency and set aside. Heat the remaining water in a saucepan and bring to a boil. Add the arrowroot/cornstarch and stir frequently until thickened. Remove from heat and set aside.

  2. In a small mixing bowl, whisk together vinegar and mustard. Slowly and olive oil, whisking to mix thoroughly. Add crushed garlic.

  3. Pour arrowroot/cornstarch mixture into the vinegar mixture and whisk thoroughly. Add salt and fresh-cracked pepper to taste. Place in a sealed container and refrigerate. Keeps for about a week in the fridge.

  4. Variations: Try gourmet or fruit vinegars, or some of the other virgin nut oils available at specialty stores -- macadamia or sunflower oils are very tasty, or try flaxseed oil for an omega-3 boost.
