I haven't tried this version yet, it's based on another member's recipe, minus the oil and 2/3 of the sweetener. If you use a gluten free baking mix, it should be baked in a brownie pan, since it won't rise very much. I'll update when I have time to try this.

Recipe Ingredients for reduced fat/sugar version of spicy pumpkin walnut bread

2 teaspoons freshly grated ginger
2 eggs
1/3 cup water
1/2 cup maple syrup
1 cup yogurt or buttermilk
1 cup pumpkin (fresh or canned)
1 teaspoon vanilla
2 cups flour or baking mix
1/2 cup buckwheat flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon allspice
1 teaspoon garam masala
1 cup walnuts

  1. mix dry ingredients

  2. mix wet ingredients

  3. combine

  4. bake in lightly greased bread pan

  5. 350 degrees 45 - 60 minutes
