Found a recipe online for brownies and tweaked to increase the fiber and lower the fat. This turned out very good...not too sweet and a perfectly modest serving size.

Recipe Ingredients for Reduced Fat From Scratch Brownies

3/4 cups whole wheat flour
1/2 cup sugar
1/3 cup unsweetened cocoa powder
1/2 tsp baking powder
1/2 cup egg substitute
3 tbsp brummel and brown spread
1 tsp vanilla flavoring

Recipe Directions for Reduced Fat From Scratch Brownies

  1. Preheat oven to 350F. Spray 8x8 pan with cooking spray.

  2. Sift dry ingredients together into large bowl.

  3. Combine remaining ingredients with a hand mixer in a medium bowl.

  4. Add wet ingredients to dry ingredients and beat until combined.

  5. Spread evenly into prepared pan and bake for 20 minutes or until a knife or toothpick inserted comes out clean.

  6. Top with your choice of sugar free syrup, Cool Whip Free, a drizzle of honey (sounds weird, but it's good!), a sprinkle of powdered sugar or enjoy as-is. This recipe does not count the calories of toppings so make sure to consider that.
