A taste of autumn - these pumpkin muffins are speckled with bits of dried cranberries and toasted walnuts. The portion is generous and there's nearly half the calories and a quarter of the fat than he original recipe.

Recipe Ingredients for Reduced Fat Pumpkin Muffins

1/2 c. egg beaters
3/4 c. sugar
1/2 c. apple sauce
1 c. pumpkin (puree, unsweetened)
2 1/4 c. flour
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt

Recipe Directions for Reduced Fat Pumpkin Muffins

  1. Beat together egg substitute, sugar, apple sauce, and pumpkin in a small mixing bowl

  2. Sift flour, spice, baking soda and salt in a large mixing bowl. Create a well.

  3. Slowly add the wet mixture to the dry. Mix until just combined.

  4. Roughly chop walnuts and dried cranberries. Fold into mixture.

  5. Pour into large muffin pan. The mix should fill enough for 6 large muffins.

  6. Bake for 20-25 minutes or until a toothpick inserted in the center returns dry.
