Recipe Ingredients for Reduced Fat Mexican Wedding Balls

1 1/3 cup oatmeal
1 cup white whole wheat flour
1 tbsp cornstarch
10 tbsp country crock light
3/4 cup powder sugar, divided
2 tsp vanilla extract
1/2 tsp almond extract

Recipe Directions for Reduced Fat Mexican Wedding Balls

  1. Preheat oven to 350F.

  2. Process oatmeal in blender or food processor until flour consistency. Add in wheat flour and cornstarch, and lightly process until well-combined.

  3. In a medium-sized bowl, cream margarine and 4 tbsp sugar until fluffy. Add in extracts and stir until combined. To this, slowly add in dry ingredients, stirring after each addition.

  4. Once dough ball is formed, place in refrigerator and chill for 30 minutes (or the freezer for 15).

  5. Roll into teaspoon sized balls. Roll cookies in remaining powder sugar, then place on a greased cookie tray.

  6. Bake for 10 minutes, until bottoms are lightly browned.

  7. Remove from oven and cool on tray for 5 minutes. Remove cookies from tray, roll through powder sugar a final time, and place on rack to cool completely.
