From Joy of Cooking, except I substituted half of sugar with applesauce

Recipe Ingredients for Reduced fat/Low cholestoral Banana Muffins

2 cups all-purpose flour
3/8 cup applesauce
3/8 cup sugar
1 tsp baking soda
1/2 tsp salt
1 large egg
1 1/3 cups bananas, mashed
1 tbsp vegetable oil

Recipe Directions for Reduced fat/Low cholestoral Banana Muffins

  1. Preheat oven to 350

  2. Whisk together flour, sugar, baking soda, salt

  3. Whisk together egg, bananas, oil

  4. Add dry to wet with a few ligth strokes just until dry ingredients are moistened - do not overmix, batter should not be smooth

  5. Divide batter into 12 muffin cups

  6. Bake until toothpick comes out clean (~30 minutes)

  7. Let cool 2-3 minutes

  8. Serve ASAP
