24 oz reduced fat cream cheese
1 tbsp lemon zest
7 oz granulated sugar
6 oz heavy cream
9 oz eggs
1/4 tsp coconut extract

Recipe Directions for Reduced-fat Cream Cheesecake

  1. combine cream cheese, lemon zest and sugar in 5 qt. mixing bowl

  2. with a paddle attachment, mix on speed two until smooth

  3. scrape bowl often, mixture must be lump free

  4. slowly add eggs, and then heavy cream

  5. continue to scrape mixture

  6. add extract

  7. pour into foil mold and bake in water bat at 325 degrees F until set

  8. cool. Store in refrigerator
