Makes 12 servings



Delicious, based on the recipe in Joy of Cooking, but altered with the substition of half of the flour for whole white wheat flour (King Arthur).

Recipe Ingredients for Reduced Fat Blueberry Muffins

1 cup all purpose flour
1 cup whole wheat flour
1/2 cup sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 large egg
3 tablespoons canola oil
1 teaspoon vanilla
1 cup skim milk
1 1/2 cups frozen blueberries
1/2 teaspoon cinnamon

Recipe Directions for Reduced Fat Blueberry Muffins

  1. Preheat oven to 400.

  2. Line standard 12 cup muffin tin with paper cups or grease.

  3. Whisk the first six ingredients together in a large bowl.

  4. Whisk the following four ingredients together in a bowl.

  5. Add the flour mixture into the wet mixture with a few strokes just until the dry ingredients are moist.

  6. Fold in the blueberries, being careful not to overmix the batter.

  7. Divide the batter among the 12 cups and sprinkle each muffin with cinnamon.

  8. Bake until a toothpick inserted in 2-3 of the muffins comes out clean. Let cool in pan for 2-3 minutes.

  9. Serve as soon as possible, preferably within a few hours of baking. Reduced fat baked goods often dry out and stale quickly.
