I love old-fashioned raisin pie. This version is only about 175 cals per slice, with 1.4g fiber even, so one slice might fit into a balanced diet. However, do watch the 35g carbs and 19g sugar if you are diabetic.

Recipe Ingredients for Reduced Calorie Raisin Pie

1/2 c flour
1/4 c whole wheat flour
1/8 tsp salt
2 T shortening
4 T Ice Water (approx.)
1 1/2 c raisins
1 1/2 c water
2 T sugar
2 T splenda
1 1/2 T flour
1/4 tsp vanilla
1 tsp butter (soft or melted)
1 tsp lemon juice

Recipe Directions for Reduced Calorie Raisin Pie

  1. Pastry: Combine flours and cut in shortening. Moisten with just enough ice water to hold together. Roll out for an 8" shell and bake blind at 450 for 10 minutes.

  2. Filling: Simmer raisins and an equal amount of water for 10 minutes. Do not drain. Combine butter and flour to make a smooth paste and add it to raisins along with the rest of the ingredients. Cook until thick. Pour into pie shell.

  3. Bake at 350 for 30 mins more. Be prepared to cover it with foil if anything begins to scorch or burn.
