Recipe Ingredients for Reduced Calorie Penne Vodka

3 tbsp I Can't Believe It's Not Butter
2 cloves garlic
28 oz tomatoes
1/4 c vodka
1/2 tsp red pepper flakes
1/2 c Whole Milk
4 oz penne pasta

Recipe Directions for Reduced Calorie Penne Vodka

  1. Heat butter in a large skillet over medium heat.

  2. Add garlic cloves and cook about 1 minute.

  3. Stir in one 28-ounce can whole plum tomatoes, drained & chopped; 1/4 c. vodka; 1/4 tsp red pepper flakes. Simmer briskly for 10 minutes.

  4. Stir in 1/2 cup whole milk. Heat through.

  5. Meanwhile, cook penne pasta in large pot of boiling salted water.

  6. Stir salt & pepper (to taste) into sauce.

  7. Drain the pasta and add to the sauce. Toss well. **serves 2**
