Twice baked cookies with lemon, almonds, and white chocolate chips.

Recipe Ingredients for Reduced Calorie Lemon Almond Biscotti with White Chocolate

1 c. all purpose flour
1 c. whole wheat flour
3/4 c. cornmeal
1 1/2 t. baking powder
1 t. salt
1/3 c. sugar
3 large eggs
3 T. lemon zest
3/4 c. chopped almonds
4 oz. white chocolate chips

Recipe Directions for Reduced Calorie Lemon Almond Biscotti with White Chocolate

  1. Preheat oven 325.

  2. Mix dry ingredients.

  3. Beat eggs and sugar, stir in lemon zest, then dry ingredients. Stir in almonds and white chocolate chips. Shape into two logs, place on baking sheet.

  4. Bake for 35 min. Slice each log into 8 cookies. Bake cookies for an additional 25 min.
