Recipe Ingredients for Reduced Calorie Jalapeno Poppers

225 grams jalapeno peppers, seeded and halved
8 ounce Fat Free Cheddar, shredded
8 ounces Fat Free Cream Cheese
2 scallions, finely chopped
1/2 cup whole-wheat flour
1 cup bread, whole wheat Commercially Prepared, made into bread crumbs
2 large egg whites
1/2 cup skim milk
1/4 tsp pepper
3 sprays Pam

Recipe Directions for Reduced Calorie Jalapeno Poppers

  1. Preheat Broiler on high. Place wire baking rack on a foil-lined baking sheet.

  2. Place jalapenos on wire rack, broil for about 2 minutes until they start to char. Cool completely.

  3. Preheat the oven to 450 degrees.

  4. In a small bowl, combine cheddar, cream cheese, and half the scallions.

  5. Using a teaspoon, fill each pepper half with the cheese mixture, packing tightly.

  6. Put flour and bread crumbs in separate shallow dishes and in a medium bowl, whisk egg whites until foamy, place milk in small bowl and make an assembly line of dipping jalapenos in milk, dredging jalapenos in flour, shaking off the excess, then add to egg whites and coat in bread crumbs.

  7. Lay jalapenos on wire rack and season with salt and pepper.

  8. Coat lightly with Pam. Bake for 20 minutes until breading is golden brown and cheese has melted.
