Recipe Ingredients for Reduced Apple Pancakes

3 medium eggs
3/4 cup flour
1/2 tsp salt
1/8 tsp nutmeg
1 cup whole milk
1 1/2 tbs butter
1 1/2 tbs margarine
4 medium apples
1/2 cup sugar

Recipe Directions for Reduced Apple Pancakes

  1. Arrange a rack at the top of the oven. Preheat oven to 425. In a cast iron skillet melt 1.5 tbs of butter. In a blender, blend eggs, milk, flour, salt, and nutmeg. Pour batter into melted butter and place the skillet on the top rack of the oven. Bake for 20 minutes.

  2. In the meantime, peel and core 4 apples and slice them thinly. Heat apples in margarine (mix in sugar to taste) until brown.

  3. When pancake is done, spread apples evenly across the top of the pancake.
