Recipe Ingredients for Red or yellow bell pepper soup

1 tbsp olive oil
1 onion, medium
2 celery stalks
2 carrots
1/4 cup parsley
2 tbsp basil, fresh
2 potatoes, medium
4 red peppers
4 cups broth, vegetable

Recipe Directions for Red or yellow bell pepper soup

  1. Heat the oil in a large, heavy saucepan over medium-high heat. Add the onion, celery, carrots, parsley and basil (all chopped) and saute until the vegetables are soft and limp, about 15 minutes. Add the potatoes and peppers, and stir to coat with the vegetables.

  2. Pour in the vegetable broth. Bring to a boil, turn down the heat to medium-low, cover adn simmer until the potatoes and peppers are soft enough to puree, about 40 minutes. Using an immersion blender or a food processor, puree the soup. Return it to the pot, if necessary and heat gently before serving
