Recipe Ingredients for Red Wine Poached Pears with a Basil, Apricot Ricotta Filling

4 full glass (6.0 fl oz)(177 g) Wine, Table, Red
1 tbsp Cinnamon, Ground
1/4 tsp Nutmeg
1 tbsp Vanilla Extract
0.5 oz Jam
1/4 cup leaves, whole Basil, Fresh
0.5 cup, packed Sugars, Brown
1/2 cup Ricotta, Part Skim Milk Cheese
0.25 cup, fluid (yields 2 cups whipped) Cream, Fluid, Heavy Whipping
4 pear, small (approx 3 per lb) Pears

Recipe Directions for Red Wine Poached Pears with a Basil, Apricot Ricotta Filling

  1. Begin by peeling and coring pears, leaving stems and body intact.

  2. Bring wine and two cups of water to a boil. Add vanilla, cinnamon, sugar, and nutmeg, bring back to a boil, then reduce to a simmer. Add pears and simmer for 15-20 minutes, until supple. Remove from heat and allow enitre lot to cool in refrigerator.

  3. In blender, combine cream, apricot jam, ricotta and a tbsp brown sugar. Chiffonade basil, add to ricotta mix and blend another half minute.

  4. To plate, spread a dollop of the cream mix on the plate and fill pear interiors. Top with chiffonade basil and serve.
