To reduce sugar, I use 1/4 cup regular sugar and 1/4 cup splenda sugar blend = 1/2 cup total "sugars"

Recipe Ingredients for Red Velvet Cupcakes

1/4 cup butter
1/2 cup sugar
1/2 cup lowfat buttermilk
2 tbls light sour cream
1/2 tsp vanilla
1/2 oz red food coloring
3/4 tsp baking soda
1/2 tsp salt
1 cup all purpose flour
1/4 cup cocoa powder

Recipe Directions for Red Velvet Cupcakes

  1. cream together softened butter and sugar blend

  2. mix in egg until creamy

  3. add in buttermilk, sour cream, vanilla, and food coloring

  4. combine dry ingredients together in a separate mixing bowl, then mix into liquids just until blended

  5. fill cupcake liners just over 1/2 full

  6. bake at 350 for around 20 minutes

  7. cool, then frost with cream cheese icing if desired
