Best cake ever! The recipe I was given calls for a cup and half of oil so I changed it to sour cream. For ease of filling and frosting (so you don't have red crumbs in your final product) freeze cake and/or frost with a light coat of frosting, refridgerate to allow frosting to hard then put remaining frosting on cake.

Recipe Ingredients for Red Velvet Cake with Cream Cheese frosting and Easy Baravian Cream filling

2 1/2 cup self rising flour
1 c low fat buttermilk
1 cup reduced fat sour cream
1/4 cup vegetable oil
1 tsp baking soda
1 tsp vanilla extract
1 ounce red food coloring
1 1/2 cup sugar
2 tsp unsweetened cocoa powder
1 tsp white vinegar
2 eggs
8 ounces reduced fat cream cheese, softened
1/4 cup butter, softened
2 tablespoons sour cream
2 teaspoons Pure Vanilla Extract
16 ounces powdered sugar
8 ounces reduced fat cream cheese
7 ounces Puddings, Vanilla, Dry Mix, Instant
3/4 cup low fat milk
8 ounces lite cool whip

Recipe Directions for Red Velvet Cake with Cream Cheese frosting and Easy Baravian Cream filling

  1. Preheat oven to 350. Mix all ingredients in mixer. Grease 3 9 inch cake pans line with wax paper. Pour batter equally into pans, bake approximately 20 minutes, test for doneness with toothpick. Remove to wire rack to cool. Allow to cool for 15-20 minutes before removing cake from pan.

  2. Filling:

  3. Beat 8 oz cream cheese, 7 oz vanilla pudding mix (2 boxes), and milk until fluffy, fold in whipped topping.

  4. Frosting:

  5. Beat 8 oz cream cheese, butter, vanilla, and sour cream until fluffly. Slowly mix in powdered sugar.

  6. To fill the cake:

  7. Put frosting in piping bag and on the first layer of cake, pipe a line of frosting all the way around the perimeter of the cake, spread filling on top. Add layer two and repeat. Top with remaining layer. Frost and decorate to your heart's content
