Recipe Ingredients for red vegetable stew

3 small whole (2-2/5" dia) Tomatoes, Red, Ripe
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 tbsp Olive Oil
1 medium raw Onion Red
3 carrot (7-1/2") Carrots
1 tsp Sea Salt
1 cup (1" cubes) Pumpkin

Recipe Directions for red vegetable stew

Throw chopped vegetables in with olive oil, add water if necessary, simmer until cooked.
