This is a very vegetabley pasta sauce that we use on spaghetti.

Recipe Ingredients for Red Vegetable Pasta Sauce

14 oz pan fried HOT ITALIAN SAUSAGE, ROPE PKG
2 medium Carrots
1/2 cup, diced Celery
1/2 medium (2-1/2" dia) Onions
1/2 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1/4 medium raw Bell Pepper Green
3 clove Garlic
3 tbsp Tomato Paste
3 cup, chopped or sliced Tomatoes, Red, Ripe
1 full glass (6.0 fl oz) Wine, Table, Red
1 oz Oregano

Recipe Directions for Red Vegetable Pasta Sauce

  1. In a skillet, brow meat. Then add vegetables (except garlic) and sauté until caramelized. Add garlic with a little water or wine to sauté, but to keep from browning.

  2. Add wine, tomatoes and tomato paste and simmer until desired consistency.

  3. Serve over pasta!
