Recipe Ingredients for Red Thai Curry Soup with Rice

1 kg chicken thighs
2 tbsp vegetable oil
1 large onion, chopped
3 cloves garlic
1 tbsp fresh lemongrass, grated
1 tbsp fresh ginger, grated
2 tbsp red curry paste
400 ml coconut milk
4 cups chicken broth
3 tbsp fish sauce
3 tbsp lime juice
3 tbsp sugar
1 medium sweet potato, peeled, cubed
2 large carrots, chopped
10 oz bamboo shoots, chopped
1 large red pepper, chopped
1/2 cup fresh cilantro, chopped
4 cups jasmine rice, cooked

Recipe Directions for Red Thai Curry Soup with Rice

  1. Heat vegetable oil at medium-heat, and add chicken, oil, onion, garlic, lemongrass, ginger, and curry paste.

  2. Add coconut milk, broth, fish sauce, lime juice, sugar, and potato, and cook until potato is slightly tender.

  3. Add carrots and bamboo to cook, and then add pepper and cilantro near the end.

  4. Serve with rice.
