Recipe Ingredients for Red Tai Vegie Soup

3 cloves Garlic
1 Onion
2 teaspoons olive oil
1 1 Litre vegetable stock
1 Potatoe
1 cup,+cubes sweet potatoe
1 Carrot
2 teaspoon curry
2/3 cup Quinoa
2 cups Coconut cream

Recipe Directions for Red Tai Vegie Soup

  1. chop onion,garlic & cut veggies into small 2cm bits.gently fry onion & garlic until soft, then add other veggies and continue to fry gently for about 10 mins add red tai curry paste and stir well ova heat to bring out the flavor add stock and Quinoa bring to boil,then gently simmer for about 30 mins (stirring now & then so nothing sticks to the bottom add coconut cream and once heated serve.

  2. if you want to make lower fat use Evaported milk & coconut essence.

  3. Enjoy
