A crock pot meal for using up odds and ends of vegetables. No need to follow the recipe exactly, just use what's on hand. The taste and calories will be about the same no matter what veggies you use.

Recipe Ingredients for Red stew

1 lb. ground beef
1/2 cup onion, chopped
2 cups cabbage, chopped
1/2 cup celery, chopped
1/2 cup butternut squash, chopped
1 cup frozen mixed vegetables
13 oz. tomato sauce
2 cups tomato juice
1 teaspoon salt
1 teaspoon pepper
1 teaspoon thyme
1 teaspoon tarragon
1/2 teaspoon sage

Recipe Directions for Red stew

  1. Brown ground beef in a non-stick pan, no need for oil even with the leanest ground beef.

  2. Combine all ingredients together in crock pot, cook on low at least 6 hours.
