Red Soup Recipe

Sweet potato, carrot, parsnip and lentil soup with ginger and chilli. A warming and filling low calorie winter soup. Freezes well.

Recipe Ingredients for Red Soup

375 grams red lentils
2 medium onions
1 kg sweet potatoes
5 medium carrots
400 grams parsnip
2 cups celery
1 red bell pepper
400 grams tinned tomatoes
2 tbsp fresh ginger
4 hot peppers
6 litres water
3 tsp salt
1/2 tsp pepper

Recipe Directions for Red Soup

  1. Add water and salt to red lentils in large pot. Bring to low simmer for 20 minutes.

  2. Chop onions, add to lentils and return to simmer for 10 minutes.

  3. Chop sweet potatoes, carrots, parsnip and celery and add to soup. Return to simmer for 10 minutes.

  4. Chop bell peppers and add to soup.

  5. Finely chop hot peppers and ginger and add to soup with pepper and mashed tinned tomatoes.

  6. Return to simmer and cook 15 minutes.

  7. Serve with wholewheat bread or freeze in portions.
