Asian inspired red snapper marinated in ginger and soy sauce topped with peppers and mushrooms.

Recipe Ingredients for Red Snapper and Peppers

1 lb red snapper, mixed species, fillet, raw
1 tsp olive oil
4 tsp low sodium soy sauce
1/4 tsp ground ginger
1 tbsp olive oil
2 medium bell peppers, julienned (one red and one green)
4 oz fresh mushroom slices,

Recipe Directions for Red Snapper and Peppers

  1. Preheat broiler. Place snapper in a cooking spray coated shallow baking pan.

  2. 2 Combine soy sauce and ginger; brush over fish. Place under broiler and broil about 8 to 10 minutes or until fish tests done.

  3. 3 Meanwhile, heat oil in a large nonstick skillet. Cook peppers and mushrooms until just crisp-tender. Serve with or over the snapper.
