Recipe Ingredients for Red Sauce Enchiladas

4 boneless chicken breast halves, cooked and shredded
15 oz black beans, rinsed and drained
15 oz corn
15 oz diced tomatoes, drained
4 oz diced green chilies, optional
20 oz enchilada sauce, divided
2 tsp cumin, divided
8 corn tortillas
2 cups shredded cheddar cheese
1/4 cup sliced green onions

Recipe Directions for Red Sauce Enchiladas

  1. Preheat oven to 375 and grease a 9x13 baking dish.

  2. In a large bowl, combine shredded chicken, beans, corn, tomatoes, green chilies, and 3/4 cup enchilada sauce and 1 tsp cumin. Place an equal portion of chicken mixture on tortillas. Divide 1 1/2 cups cheese equally among tortillas, sprinkling over chicken mixture. Roll up tortillas and place in baking dish.

  3. In a small bowl, combine remaining enchilada sauce and cumin; pour over tops of enchiladas. Sprinkle with remaining cheese and green onion. Bake for 20-25 minutes.
