This is a nice light way to roast potatoes. I used red potatoes as they are one of the lowest in your sugar glycimic index.

Recipe Ingredients for red roasted potatoes

454 2/5 grams Potatoes
8 serving Extra Virgin Olive Oil
2 tsp Rosemary, Dried
1 tsp, leaves Thyme, Dried

Recipe Directions for red roasted potatoes

Take a 13x9 pan and spead the olive oil in the botom. leave the skins on the potaoes but cut the in half and place im pan sprinkle the herbs on it and bake at 400 degrees for 20 mins or until golden brown. serve hot.
