Recipe Ingredients for red-roasted chicken legs

400 g chicken legs
2 tbsp soy sauce
1 tbsp rice wine
1 tsp sugar
1/8 cup scallions
1 tbsp ginger

Recipe Directions for red-roasted chicken legs

  1. Perforate the legs with a fork or skewer.

  2. Cut the legs into chunks, bone-in.

  3. Combine the seasoning together to make a marinade.

  4. Marinate the leg chunks for 1 hour in a sealed bag, agitating the bag several times during the hour to infuse the flavor into the meat.

  5. Place the meat on a plate.

  6. Microwave on high for 5 minutes, turning the chicken halfway through. Pierce the chicken with a fork or skewer. If oil flows out, then the chicken is done.

  7. If desired, halfway through, wrap the plate and contents in aluminum foil to prevent over-cooking of the edge pieces.
