This recipe is similar to a paella and other rice dishes like jambalaya.

Recipe Ingredients for Red Rice Salad

1 tbsp. canola oil
3 cloves garlic, crushed
1 small onion, chopped
1/4 cup tomato sauce
1/2 cup uncooked red or brown rice
1 cup water

Recipe Directions for Red Rice Salad

  1. Heat the cooking oil in a heavy saucepan and brown the garlic. Stir in the chopped onion, tomato sauce and uncooked rice. Bring to a boil, then cover and simmer for 20 minutes or until done.

  2. You may add other vegetables and cubed chicken
