Red rice is available at natural food stores. It has a shorter grain and has less of a cooking time. It is slightly sticky. Sticky rice is good rice.

Recipe Ingredients for Red Rice Salad Bhutanese

1 c wild rice or red rice
1 1/2 cups (360 ml.) water
1 pinch of salt
1/2 cup finely chopped scallions
3/4 cup finely chopped red bell pepper
3/4 cup cranberries, dried, or berries or craizens
3/4 cup toasted pecans, roughly chopped
1/4 cup olive oil
1/2 cup white wine
1 clove garlic, finely chopped
1 tablespoon sugar
2 tablespoons lemon juice
1 teaspoon fresh ginger, grated

Recipe Directions for Red Rice Salad Bhutanese

  1. You may cook in a rice cooker or bring to a boil in a heavy saucepan, cover, lower the heat and simmer for about 20 minutes.

  2. Turn off the heat, let stand covered for 4 minutes, then fluff with a fork and let cool.

  3. When rice is cool toss together with above ingredients, then add dressing to taste. The dressing ingredients start with the olive oil.

  4. Whisk together, let stand for 20-30 minutes

  5. Chill (to let rice soak up dressing) and serve
