Recipe Ingredients for Red Quinoa, roasted corn and cilantro salad

4 serving Ancient Harvest Inca Red Quinoa
2 cup Corn, Sweet, Yellow
2 cup Natural Goodness Chicken Broth
2 cup Organic Cherry Tomatoes
1 fruit without skin and seeds Avocados
0.5 cup, chopped Onions
1 lime yields Lime Juice
3 tbsp Vinegar Balsamic
1 serving, raw Cilantro
4 Tbsp Cilantro Salad Dressing, Reduced Fat

Recipe Directions for Red Quinoa, roasted corn and cilantro salad

Cook 1 c. quinoa in 2 c. of the broth. Put in large bowl. Cut the kernels off of 3 ears of corn (makes approximately 2 c. of kernels and you can substitute canned or frozen (thawed) corn). Heat a skillet to medium heat and add the corn (no oil). Stir frequently until corn begins to brown. Add to quinoa. Rinse and drain a 15 oz. can of black beans and add to quinoa. Chop 1/2 of a small onion (I like red onions best but yellow onions will work) and about 1/2 c. of cilantro and add to other ingredients. Cut tomatoes in half, and slice avacado into small pieces and add to salad. Add juice of one lime, 3 T. of balsamic vinegar and 1/4 c. of low-fat cilantro dressing. (If you don't have the dressing, add 1/4 c. of olive oil, but it will change the calorie count.) Mix altogether and serve. It can be served immediately, but the flavors really get better if it stays in the refrigerator for a few hours.
