Simple red potatoe and avocado salad. 10 one cup servings

Recipe Ingredients for Red Potatos & Avocados Salad

2 fruit without skin and seeds Avocados
36 oz Potatoes, Red, Flesh And Skin
8 oz Low Fat Mayonnaise Dressing
5 tsp Vinegar, Cider
3 tsp Classic Dijon Mustard
1/4 tsp Sea Salt

Recipe Directions for Red Potatos & Avocados Salad

  1. Dice red potatoes into 1" cubes, cover with water and bring to boil until soft to bite but firm.

  2. Mix mayo, mustard, vinegar, salt and pepper.

  3. Drain potatoes, pat dry and mix with mayo combination.

  4. Peel, seed and cut avocados in 1/2" cubes.

  5. Gently mix avocados into potato salad combination.

  6. Refrigerate for 4 hours.
