Makes 4 servings



A light, healthy alternative to mayo based potato salad. You can add all sorts of veggies if you'd like, for example peas or some blackened corn is nice too.

Recipe Ingredients for Red Potato Salad

1 lb red potato
1 cup fat free sour cream
2 stalks celery
3 slices extra lean turkey bacon
1 tbs chives
1 tbs lemon juice
1 tsp salt
1 tsp pepper

Recipe Directions for Red Potato Salad

  1. Chop potatoes into 1 inch cubes and boil until tender. I prefer the skins on, but it is up to you.

  2. Meanwhile, dice up uncooked turkey bacon (its easier this way) and bake or cook in skillet til crispy.

  3. Dice celery, chive and combine with bacon and potatoes once cool, mix in sour cream and add salt, pepper and lemon juice to taste.

  4. refridgerate for at least an hour.
