Recipe Ingredients for Red Potato Salad with Mayo & Fat Free Sour Cream

9 oz red potatoes (with skins -appx. 4 med.)
3 hard boiled eggs (chopped)
4 scallions (chopped, including stems)
1 cup diced celery
2 tablespoons pimento (optional and for "color")
3/4 cup cooked green beans (chopped)
1/3 cup Best Foods Mayonnaise
2/3 cup Fat Free Sour Cream
1 teaspoon yellow mustard

Recipe Directions for Red Potato Salad with Mayo & Fat Free Sour Cream

  1. Cook the potatoes and set aside

  2. Cook the green beans for approx. 3 minutes (until bright green in color) and chop into bite-size pieces and add to the potatoes

  3. Dice the celery and chop the eggs

  4. Put the potatoes, the green beans, the celery, eggs and the pimento into large bowl

  5. Make the dressing in a separate bowl with the mayonnaise, the sour cream and mustard. Combine and season to taste with sea salt and white pepper and pour over the potatoes and vegetables and toss to coat

  6. Chill and serve cold
