Delicious and simple soup made from red peppers, tomato and potatoes. Freezes well.

Recipe Ingredients for Red Pepper, Tomato and Potato Soup

1 large onion
2 red bell peppers
1 tomato
3 cloves garlic
3 vegetable stock cubes
1/2 teaspoon fresh rosemary
2 large potatoes
4 cups water

Recipe Directions for Red Pepper, Tomato and Potato Soup

  1. Halve the pepper and remove the stalk and the seeds.

  2. Peel and halve the onion and cut the tomato in half as well.

  3. Put the pepper, onion, tomato and garlic onto a baking tray and roast in a hot oven for 15 minutes or so.

  4. Peel and chop potatoes. Bring to a boil with stock cubes and rosemary.

  5. When the pepper is just turning black at the edges, remove from the oven and remove the skin from the tomato. roughly chop everything except the garlic which can be squeezed from its skin.

  6. Add roasted vegetables to water and bring everything to a slight boil for 5 minutes.

  7. Remove from heat, puree and serve.
