A quick and tasty recipe even the kids enjoy!

Recipe Ingredients for Red Pepper and Tomato Pasta

1 red pepper
2 medium tomatoes
1 tsp dried chili flakes
1 tsp dried basil
2 slices mature cheese
100 g pasta - penne or rigatoni
1 tsp olive oil (approx)

Recipe Directions for Red Pepper and Tomato Pasta

  1. Put pasta on to boil, whilst it is cooking chop pepper and tomatoes into cubes approx 1cm and place into a serving bowl (needs to be big enough to add pasta to and be able to mix)

  2. Grind the chili flakes over the pepper and tom mix and add dried basil, both according to taste. Add olive oil and stir ingredients.

  3. chop up cheese into smallish pieces and leave to one side.

  4. once pasta has finished cooking place on top of pepper/tomato mix, add cheese to top of pasta and stir ingredients together.

  5. serve straight away.

  6. If you want the cheese to melt well, make sure pepper and tomatoes are at room temperature.

  7. The dish can also be eaten cold or made in advance and left in the fridge and then all that is needed is to cook the pasta.

  8. Alternatively instead of pasta serve on bed of leafy greens, like spinach, rocket and watercress.
