Originally a Weight Watchers recipe, I omitted 3 T. of butter.

Recipe Ingredients for Red Pepper Soup

3 large red bell peppers, seeded and chopped
1 med. onion, finely chopped
1/2 tsp cumin
1/2 tsp cayenne
3 cups chicken or veg. stock
2 tsp. fresh lemon juice ( also heavy-probably 3-4 tsp.)
1 tsp salt
1 tsp black pepper
1 Parsley or chives for garnish

Recipe Directions for Red Pepper Soup

  1. Melt buter, add peppers and onions until soft, but do not brown. Or, without butter, just add everything to the pot and cover, let cook until vegetables are tender and then puree.

  2. Add seasonings.

  3. Add stock. Bring to a boil, reduce heat and simmer for 20 minutes.

  4. Puree; return to pan

  5. Mix in lemon juice

  6. Serve in warmed bowls

  7. Garnish as desired ( I used a sprinkle of black salt )

  8. Makes 5-6 cups (4-5 servings)
