Roasted red pepper sauce for pasta.

Recipe Ingredients for Red Pepper Sauce

1 medium onion
4 cloves garlic
4 medium tomatoes
2 large red bell peppers
1 cup water (or vegetable stock)
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped

Recipe Directions for Red Pepper Sauce

Roast and puree all of the vegetables. Put the puree in a saucepan. Add as much of the water or stock as needed to make a thick but pourable sauce. Stir in the herbs and simmer for about 5 minutes. Add salt and pepper to taste.
